Healthy Fruit Salad with Goji recipes

Total Preparation & Cooking Time: 50 Minutes

Servings: 2-4

Ingredients:

  • Coconut or cashew yogurt: ¼ cup
  • Goji berries¼ cup
  • Berries of choice: ½ cup
  • Diced apples: ½ cup
  • Diced peaches: ½ cup
  • Sliced grapes: ½ cup
  • Dried cranberries: ½ cup
  • Coconut sugar: 1 tablespoon
  • Chopped walnuts or other nuts: 3-4 tablespoons
  • Ground cinnamon: 1 dash
  • Ground nutmeg: 1 dash

Directions:

  1. Mix coconut sugar, spices, and yogurt together in one bowl.
  2. Combine fruits and nuts in another bowl. 
  3. Fold yogurt into fruits and nuts, mix well.
  4. Sprinkle goji berry powder (1 dash), nutmeg, cinnamon, and coconut shreds on the top.
  5. Chill salad for 30 minutes and serve.
