Keto Chocolate Bread Recipe

INGREDIENTS:

  • 4 Eggs (Room Temp.)
  • 1/4 Cup Cacao Powder
  • 1/4 Cup Coconut Flour 
  • 3 Scoops Collagen Peptides 
  • 1 Tsp Ghee Cool Melted 
  • 3/4 Tspn Baking Soda
  • 2 Tbsp 70 % Dark Chocolate Chips or Cacao Nibs 
  • Yacon Syrup to drizzle on top 

 

PREPARATION:


1. Preheat Oven 350 F
2. Mix Eggs on High Speed 3-5 min.
3. In a separate bowl combine Collagen, Coconut Flour, Baking Soda. 
4. Add Ghee to egg mixture. Mix 1 more min. 
5. Spoon in dry mixture. Keep mixing for 1-2 minutes. 
6. Pour onto parchment lined loaf pan. 
7. Cook for 15 minutes on middle oven rack. 
8. Remove from oven + cover top with as many or little chocolate chips as you’d like.
9. Put back in oven 5 min. The center should just not jiggle when shaken. May take 1-2 more min depending on oven. 
10. Let it cool + firm in the fridge for 30 minutes. 
11. Slice. Then, top with Melted Coconut Butter + Generously drizzle Yacon Syrup over. This bread is not sweet at all. You’re welcome to add more Yacon Syrup.

Cacao Nib Cookies

Cacao Nib Cookies

Total Preparation & Cooking Time: 1 hour

Servings: 10

Ingredients:

  • 1 1/2 cup all-purpose flour or flour alternative
  • 1/2 cup oats
  • 1 tbsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1 cup unsalted butter or butter alternative, melted
  • 1 cup packed brown sugar, or coconut sugar
  • 2 cup cacao nibs or more to taste
  • 2 eggs
  • 1/2 cup sugar, or lucuma powder
  • 1/2 tsp. salt
  • 1/4 pecans, crushed (optional)

Directions:

  1. Preheat your oven to 165 C/325 F. Line in the cookie sheets with the parchment paper or lightly grease them.
  2. Sift flour together with the baking soda & salt; set aside.
  3. Cream the melted butter together with the white sugar and brown sugar until well blended in a medium size bowl.
  4. Beat in the egg yolk, egg and vanilla until light & creamy.
  5. Mix in the sifted ingredients until just blended. Using a wooden spoon; stir in the cacao nibs. Drop approximately 1/4 cup of the cookie dough onto the already prepared cookie sheets, preferably 3” apart. Bake in the preheated oven until the edges are lightly toasted, for 15 to 17 minutes.
  6. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Maca Lucuma Cashew Butter Fudge Recipe

Total Preparation: 5 minutes + Setting Time: 3-4 Hours

Servings: up to 36 squares

Ingredients:

Cashew Fudge
  • 1 1/2 cup cashew butter
  • 1 cup coconut oil, melted
  • 1/4 cup pure maple syrup
  • 1/8 cup lucuma powder
  • 1/4 teaspoon sea salt
  • 2 tablespoons cacao powder
  • 1 tablespoon maca powder
  • 1/2 tablespoon mesquite powder
Chocolate Swirl
  • 1 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips
  • 2 teaspoons coconut oil

Directions:

  1. In a medium saucepan, combine the cashew butter, coconut oil, maple syrup and salt over very low heat. Continue whisking until all ingredients look thoroughly combined and creamy. Remove saucepan from the heat and set aside to cool.
  2. Using a double boiler or a microwave, melt the dark chocolate swirl ingredients together over low heat. Set aside.
  3. Whisk the collagen, cacao, maca & mesquite into the nut butter fudge mixture.
  4. Line an 8x8' square pan with parchment paper. Pour the cashew butter fudge into the pan and tap it on the counter so it spreads evenly across the bottom. 
  5. Drizzle the chocolate swirl over the fudge, then use a butter knife or toothpick to swirl it into designs.
  6. Transfer the fudge to the freezer to set for 3-4 hours. When ready to serve, cut it into squares.
Tips:
  • If you're using salted nut butter, be sure to taste the mixture before you add any more sea salt.
  • Be sure to use a hot knife to make it easier (run the knife under hot water for several seconds and dry it with a towel between slicing!) This will help it cut cleanly. 
  • Store in an airtight container in the freezer for up to two weeks. Enjoy!

Maca & Mesquite Waffles with Yacon Syrup recipes

These waffles are packed full of nutrition, including energy boosting and adaptogenic superfoods, healthy omegas from flax, and lots of high antioxidant fruits. With the superfruit sauce, they are absolutely delicious and sure to pass the kid test. Enjoy! 

Preparation Time: 30 minutes

Servings: Makes 6-8 waffles

Ingredients:

Waffles
  • 1 1/2 cups gluten free or paleo flour blend
  • 1/4 cup buckwheat flour
  • 1/4 cup ground flaxseed
  • 2 tablespoons maca powder
  • 1 tablespoon mesquite powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon pink sea salt
  • 1/3 cup coconut oil, melted
  • 1 cup nut milk of choice
  • 2 eggs, beaten
  • 1 banana, smashed
  • 1 cup fresh raspberries, smashed

Superfruit Sauce

  • 1 cup yacon syrup
  • 1/4 cup cherries, pitted and smashed
  • 1/4 cup blueberries, smashed
  • 1/4 cup goji berries, soaked and pureed
  • 1/4 cup blackberries, smashed
  • 1/4 cup raspberries, smashed
  • 2 teaspoons lemon juice

Directions:

  1. Blend all dry waffle ingredients together in one bowl. Blend all wet waffle ingredients including fruit together in second bowl. Then combine both and mix well. Set aside while making superfruit sauce. 
  2. In a pan on medium heat sprayed with coconut oil, add all ingredients for superfruit sauce and cook, stirring often, until it's bubbling and has reduced a bit (8-10 mins). This is a chunky fruit sauce, but you could also puree in a food processor or blender after cooking too if you'd like more of a syrupy and pourable consistency, and in that case you should aim for a bit less reduction. Let sauce cool after. It can be stored in a glass container in the fridge for a week. 
  3. Heat up waffle maker, and spray with coconut oil. Pour waffle mix in appropriate amount and cook based on your waffle maker. 
  4. Top waffles with superfruit sauce and enjoy! It's delicious with the sauce still a little warm. Add coconut whipped cream, nuts, cacao nibs, and more fruit if desired.
