Almond, Maca, & Chia Smoothie Recipe

Ingredients:

  • 1 tbsp almond butter
  • 2 bananas, medium & frozen
  • 1 cup almond milk, unsweetened
  • ½ tsp ground cinnamon
  • 1 tbsp chia seeds
  • ½ tsp pure vanilla extract
  • 1 tbsp gelatinized maca powder

Directions:

  1. Add everything together to a blender & blend on high settings for couple of minutes. Sprinkle ground cinnamon over the top.
  2. Serve & enjoy!

Arracacha Fried Chicken recipes

Total Preparation & Cooking Time: 30 Minutes

Servings: 4

Ingredients:

  • Dry & seasoned bread crumbs or almond flour: 2 cups
  • All-purpose flour or alternative flour blend: 2 cups for coating only
  • Arracacha powder: 3 tablespoons
  • Ground italian seasoning: 1 tablespoon
  • Sea salt and fresh ground pepper, to taste
  • Frying olive oil or canola: 2 cups
  • Whisked egg: 1

Directions:

  1. Take one bowl & mix arracacha and flour together in this bowl.
  2. Coat chicken pieces on by one in flour mixture, beaten egg and seasoned bread crumbs.
  3. Heat oil at almost 350 °F and fry your coated chicken pieces in hot oil.
  4. Cook well until you get them golden brown. Cook for almost 5 minutes.

Avocado Salad with Goldenberries recipes

Total Preparation & Cooking Time: 30 Minutes

Servings: 4

Ingredients:

For the salad:

  • 1/3 cup Goldenberries, dried
  • 2 stalks celery , clean & sliced into very small pieces
  • ½ cucumber, diced
  • ½ small red onion sliced thin
  • 4 avocados, cut in half, pitted & diced into small pieces

For the vinaigrette:

  • A pinch of chilli, crushed
  • Juice of 1 orange
  • 2 tbsp. oil
  • 3 tablespoons sliced almonds
  • Pepper & salt to taste
  • 2 cups arugula or spring mix, washed & pat dry

Directions:

  1. Mix orange juice with oil and then season it with chilli, salt & pepper. Add in the goldenberries to the vinaigrette & let sit for 12 to 15 minutes, preferably at room temperature, then dice the soaked goldenberries and mix into vinaigrette.
  2. Mix the avocados, celery, cucumber, onion, goldenberry, vinaigrette, almonds, & then fold in the arugula or spring mix. 
  3. Arrange the salad in a large bowl & serve immediately.

    Black Bean and Corn Soup recipes

     Ingredients:

    • Olive oil: 1 tablespoon
    • Chopped onion: 1 large
    • Cacao morning powder: 1 teaspoon
    • Chopped celery: 1 stalk
    • Chopped carrots: 2
    • Chopped cloves garlic: 4
    • Chili powder: 2 tablespoons
    • Ground cumin: 1 tablespoon
    • Black pepper: 1 pinch
    • Vegetable broth: 4 cups
    • Black beans: 60 ounce
    • Whole kernel corn: 15 ounce
    • Crushed tomatoes: 14.5 ounce
    • Diced avocado, optional for topping
    • Chopped cilantro, optional for topping

    Directions:

    1. Take one large pot and heat oil in this pot over medium flame.
    2. Sauté garlic, carrots, celery and onion for almost five minutes.
    3. Season with black pepper, cacao powder, cumin and chili powder and cook for nearly one minute again.
    4. Stir in beans (30 ounces), corn and vegetable broth. Let it boil.
    5. In the meantime, take a blender or food processor and process tomatoes and remaining 30 ounces beans to make a smooth mixture.
    6. Stir processed mixture in the soup blend and decrease heat to medium. Let it simmer for almost 15 minutes. Serve it hot, with toppings if desired.

    Blueberry Maca Muffins

    Total Preparation & Cooking Time: 1 hour & 20 Minutes

    Servings: 4

    Ingredients:

    • 1 1/2 cup blueberries, frozen
    • 1 cup sourdough starter
    • 3 tsp. cinnamon, ground
    • 1 1/2 cup yogurt, homemade
    • 1/4 cup melted coconut oil
    • 2 eggs, medium
    • 1/2 cup flour (whole wheat, gluten-free, or paleo blend)
    • 3 tsp. nutmeg
    • 1 cup old-fashioned oatmeal
    • 1/2 cup rapadura
    • 1/2 tsp. almond extract
    • 2 tbsp. organic maca
    • 1 tsp. baking soda
    • 1/2 tsp. vanilla extract
    • 1 tsp. Celtic sea salt
    • Stevia to taste
    • Almonds to sprinkle on top

    Directions:

    1. Combine sourdough starter together with eggs, yogurt, & coconut oil in a mixing bowl, preferably large size.
    2. Add rapadura, oatmeal, whole wheat flour, almond extracts, ground cinnamon, organic maca, nutmeg, vanilla & salt; mix well.
    3. Cover & let sit in a refrigerator for a day.
    4. When ready to bake, remove the muffin dough from the refrigerator and bring it to the room temperature. Preheat your oven to 375 F/185 C & using the melted coconut oil, lightly spray the muffin pans.
    5. Mix in the frozen blueberries, baking soda & stevia.
    6. Fill each muffin cup with the batter approximately 3/4 full & bake for half an hour or little longer.
    7. Let cool at room temperature for couple of minutes and then transfer the muffins carefully on a cooling rack to cool completely.

    Cacao Nib Cookies

    Total Preparation & Cooking Time: 1 hour

    Servings: 10

    Ingredients:

    • 1 1/2 cup all-purpose flour or flour alternative
    • 1/2 cup oats
    • 1 tbsp. vanilla extract
    • 1/2 tsp. baking soda
    • 1 cup unsalted butter or butter alternative, melted
    • 1 cup packed brown sugar, or coconut sugar
    • 2 cup cacao nibs or more to taste
    • 2 eggs
    • 1/2 cup sugar, or lucuma powder
    • 1/2 tsp. salt
    • 1/4 pecans, crushed (optional)

    Directions:

    1. Preheat your oven to 165 C/325 F. Line in the cookie sheets with the parchment paper or lightly grease them.
    2. Sift flour together with the baking soda & salt; set aside.
    3. Cream the melted butter together with the white sugar and brown sugar until well blended in a medium size bowl.
    4. Beat in the egg yolk, egg and vanilla until light & creamy.
    5. Mix in the sifted ingredients until just blended. Using a wooden spoon; stir in the cacao nibs. Drop approximately 1/4 cup of the cookie dough onto the already prepared cookie sheets, preferably 3” apart. Bake in the preheated oven until the edges are lightly toasted, for 15 to 17 minutes.
    6. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

    Cacao Banana Flaxseed Muffins recipes

    Delightfully fudgy and good-for-you awesomeness for any occasion. May be (happily) confused as cupcakes and will definitely trick the kids into eating something super healthy. Enjoy! 

    Preparation and Cooking Time: 25 minutes

    Servings: 12 large muffins or 24 small

     

    Ingredients:

    • 1/2 cup vegan butter (earth balance) or coconut oil, melted
    • 1/4 cup packed light brown sugar or coconut sugar
    • 4 medium very ripe bananas, mashed
    • 1 tsp vanilla extract
    • 1/4 cup almond milk or alternative milk of choice
    • 2 large eggs, whisked
    • 1 1/4 cup gluten free flour or alternative flour blend
    • 1/4 cup ground flaxseed
    • 1/4 cup cacao powder
    • 1 1/2 tsp baking soda 
    • 1/2 teaspoon salt
    • 1/3 cup semi-sweet chocolate chips, pulsed in a food processor to make small chunks and flakes 
    Directions:
    1. Preheat the oven to 350°F. Line a large or small muffin pan with paper liners.
    2. Using a stand mixer, a hand mixer, a whisk, or two forks, cream the butter or oil with the sugar sugar. Add the bananas, vanilla, and almond milk, and whisk until smooth. Whisk in the eggs.
    3. In a separate large bowl, whisk together the flour, cacao powder, flaxseed, baking soda, and salt.
    4. Add the wet ingredients to the dry ingredients and mix just until combined, then fold in the chocolate pieces.
    5. Spoon the batter into the muffin liners until they are almost full.
    6. Bake for 12 to 15 minutes, or until a toothpick inserted into the center of a muffin comes out just damp with small crumbs attached.
    7. Place the muffins on a cooling rack and let them cool for at least 5 minutes. They will be fudgy and soft when warm - super yum! 
    8. Enjoy hot, room temp, or cool. Store in a sealed container on the counter for a day or two, or in the fridge for up to a week.

    Cacao Nib Hot Chocolate recipes

    Total Preparation & Cooking Time: 50 Minutes

    Servings: 6

    Ingredients:

    • 6 ounces 70% bittersweet chocolate, finely chopped
    • 1 ounce cacao nibs
    • 3 ounces sugar
    • 16 ounces whole milk
    • 1/4 tsp. kosher salt
    • 2 ounces water

    Directions:

    1. In a spice grinder, pulse the cacao nibs until coarsely chopped, preferably 3 to 4 times. Place the nibs in a microwave-safe measuring cup, preferably 1-quart & then add in the milk. Microwave until the milk reaches 160 F, for couple of minutes, preferably on high settings. Steep for half an hour, preferably at room temperature.
    2. In the meantime, combine chocolate together with the water, salt & sugar in a French press carafe, preferably 1-liter; set aside.
    3. You are done with the steeping process, put the nib-milk mixture again to the microwave & heat until it starts simmering, for couple of minutes, preferably on high.
    4. Using a fine-mesh strainer; strain the hot nib-milk mixture into the French press carafe; set aside for a minute and then stir until the milk & chocolate well combined. Pump the plunger of the French press to froth & aerate, preferably 10 to 15 times. Serve immediately

    Cacao Nibs Raw Brownie Bites Recipes

    Total Preparation & Cooking Time: 1 hour

    Servings: 22

    Ingredients:

    • 2 tbsp coconut oil
    • 1/4 cup chia sesed
    • 2 bananas, medium, ripe with yellow & brown spots
    • 1/4 cup cacao powder
    • 1 cup oats, old-fashioned or quick
    • 1/4 cup cacao nibs
    • 1 avocado, medium
    • 8 Medjool dates, pitted & chopped
    • 1/2 tsp pure vanilla extract
    • Unsulphured coconut flakes & cacao powder for coating

    Directions:

    1. Add bananas, vanilla, avocado and coconut oil in a medium size ball; mash until smooth using a masher. Add in the leftover ingredients; mix well until just combined.
    2. Using small cookie scoop; scoop some of the dough & roll into a ball between the palms of your hands, preferably golf sized.
    3. Spread the coatings on plates, if desired and then roll bites in them.
    4. Place them in a storage container & repeat this process until you have used all of the dough. Enjoy chilled.
