    The raw, unprocessed form of chocolate is the cacao bean. The cacao bean originates from the Theobroma cacao tree, which bears fruit called pods. When ripe, these pods are cut open and they contain around 40-60 cacao seeds, sometimes referred to asbeans. These seeds then undergo the process of fermentation, after which they are dried to reap raw cacao beans. These raw cacao beans are loaded with phytochemicals that our bodies need. Cacao nibs are cacao beans that have been minimally processed, separated from their husks and chopped into smaller pieces.     The use of raw cacao for health reasons dates back at least 3,000 years. Raw cacao beans contain anti-oxidants, as well as other vitamins and minerals like magnesium, calcium, zinc, iron, copper, manganese, potassium and sulfur, flavonoid antioxidants such as polyphenols, essential fats like oleic acid which is a monounsaturated heart-healthy fat, proteins, carbohydrates, fibers and vitamins E, B1, B2, B5, B3 and B9.Yacon, the low calorie sweetener on our cacao nibs, is also nutritious. Yacon also has a low glycemic index, making it suitable for those with diabetes to also enjoy a sweet treat.

    Raw Cacao is packed with compounds (i.e.phenylethylamine and anandamide) that increase levels of endorphins and serotonin in our brain; these are the chemicals that improve our mood, reduce anxiety, and give us a general sense of well-being. .

    Q: What is the difference between Cacao and Cocoa?

    A: This is a common question, as some think cacao is a misspelling, however it is not. Cocoa and Cacao both originate from raw cacao and the difference is in the processing. Raw cacao is fermented and minimally processed to maintain all of the nutritional benefits.Cocoa refers to the powder that is commonly seen in American supermarkets and stirred into beverages. The process used to manufacture cocoa entails applying high heat to raw cacao, which destroys some of the beneficial nutrients, and usually includes the addition of sugar and other ingredients.

    Q: How are your Cacao Nibs different from others on the market?

    A: Raw cacao nibs are bitter tasting to some individuals, and our nibs have the natural sweetener yaconadded to lessen the bitterness and offer a sweet, yet nutritious treat. Yacon is a low calorie, very low glycemic,all- natural sweetener with beneficial properties making it suitable for diabetics.

    Q: Do you know the caffeine content of your Cacao Nibs?

    A: There is a minimal amount of caffeine in raw cacao, approximately 12 mg per 1tsp/5 gram serving.

    Q: Are there any side effects of eating cacao nibs?

    A: Anyone who has a known chocolate allergy must avoid raw cacao products. In addition, as healthy as cacao nibs may be, eating too many may cause side effects in certain individuals. Cacao contains caffeine, as well as a substance called theobromine, both of which are known stimulants. Therefore, eating too many cacao nibs may cause anxiety, heartburn, sleeplessness and/or abnormal heart rhythms. Sensitivity to caffeine and theobromine varies by the individual; some people may experience side effects from just one serving, while others may only experience adverse reactions with large doses.

    Q: Are cacoa nibs safe for pregnant or lactating women?

    A: Although small amounts of cacao are LIKELY SAFE, due to caffeine in raw cacao and links to increased risk of miscarriage, pregnant women should consult their doctor before adding raw cacao products into your daily nutritional regimen. Lactating women should also be cautious due to caffeine and theobromine (stimulants) that could be passed to nursing children.

    Q: Why does my Cacao have a warning on it?

    A: California Prop 65 warnings are required by California’s Safe Drinking Water and Toxic Enforcement Act of 1986. Companies are required to place a warning label on any product they sell within California if it exceeds the level that the State has established as risk free for a list of over eight hundred chemicals. These standards are specific to the state of California. Cacao contains Cadmium, and the levels in California are more stringent than what is required at the U.S. federal level, and by other governments including Canada and the European Union. Under California Proposition 65, the State of California has determined that a warning is necessary for Cadmium in a product if its use would result in more than 1/1,000 (one one-thousandth) the level of exposure that has an observable effect on reproductive toxicity. The levels of Cadmium in Alovitoxproducts are well below a level that has been shown to have any adverse health consequence; however we are complying with the law by applying the warning label. If you are concerned about Cadmium levels in your diet, please consult your doctor.
